Lentil Soup: healthy and hearty

Lentil soup is one of the world’s oldest comfort foods, simple, nourishing, and endlessly adaptable. Loved across cultures from the Middle East to Europe and South Asia, this humble dish transforms a pantry staple into a warm, flavorful meal that fits perfectly into busy lifestyles. Whether you’re cooking for a family, meal prepping for the week, or looking for a high-protein plant-based option, lentil soup checks every box.

Why Lentil Soup Is a Nutritional Powerhouse

Lentils are small but mighty. Packed with plant protein, dietary fiber, and essential minerals such as iron, potassium, and folate, they make a wholesome base for a balanced meal. A single bowl of lentil soup offers:

  • High protein content — ideal for vegetarians and vegans
  • Sustained energy thanks to complex carbohydrates
  • Heart-healthy fiber that supports digestion
  • Low fat and naturally gluten-free ingredients

This combination not only keeps you satisfied longer but also makes lentil soup suitable for health-conscious eaters.

Choosing the Right Lentils for Your Soup

Different types of lentils bring unique textures and flavors:

  • Brown Lentils: The most common choice—earthy and hold their shape well.
  • Green Lentils: Slightly peppery with a firmer bite.
  • Red or Yellow Lentils: Quick-cooking and perfect for creamy, thick soups.
  • French Lentils (Puy): Delicate and slightly nutty, excellent for refined recipes.

Mixing lentil varieties can create even more depth.

Core Ingredients That Build Flavor

While recipes vary across regions, most great lentil soups start with:

  • Aromatic base: onion, carrot, celery, garlic
  • Warm spices: cumin, turmeric, paprika, bay leaves, or thyme
  • A rich liquid: vegetable or chicken broth
  • Acidic finish: lemon juice or vinegar to brighten the flavor

From there, you can add tomatoes, leafy greens, potatoes, or even coconut milk for a creamy finish.

Lentil soup: healthy & hearty

A hearty and healthy soup to warm you up on a chilly day. Earthy flavors combined with fresh vegetables make this an easy and inexpensive option for a weeknight dinner.
Servings: 8
Course: dinner, Main Course, potluck, Soup
Cuisine: American, French, Mediterranean

Ingredients

  • 1 Cup green lentils dried
  • 1 Onion yellow or white; chopped small
  • 4 Carrots peeled/ chopped medium size
  • 4 Celery stalks sliced medium size
  • 2 Russet Potatoes peeled/ sliced into ½ “cubes
  • 4-6 Garlic cloves minced fine
  • 8 cups Chicken broth
  • 1 teaspoon Cumin dried powder
  • 1 teaspoon Coriander dried powder
  • 1 tsp dried thyme or 4-5 sprigs of fresh thyme
  • 2-3 dried Bay Leaves
  • 2 Teaspoons Sea Salt
  • 1 ½ teaspoons Black Pepper ground
  • ¼ cup Extra virgin olive oil or any oil you like
  • 2 tbsp Lemon juice 1/2 lemon juiced

Method

  1. First wash your dried lentils in a small bowl. Fill with clean water then drain about 2 -3 times. Clean out any sediment or bad beans Then you will want to jump start the cooking process with the washed lentils.
  2. In a small saucepan bring 3 cups of water to a rolling boil and turn off heat. Add the washed lentils to the hot water (with heat turned off). Stir and cover, let sit for about 15 minutes while you prep the other ingredients.
  3. Chop the onion, carrots, celery and potatoes. Once you cut your potatoes you will need to put them in a bowl of water (water must cover the potatoes or else they will turn brown)
  4. In a large pot over medium high heat add Olive oil or your favorite oil. Cook the onion until it’s translucent (don’t want it browned just kind of see through) add cumin, coriander and thyme. Cooking these herbs on medium heat really opens up the intensity of their flavors. Then, after 2 minutes or so add carrot, celery and minced garlic. Cook for about 4 minutes. (Don’t overcook these veggies)
  5. Drain the lentils and add to pot. Add Salt and Pepper and stir together with vegetables.
  6. Add chicken broth and bay leaves and bring to a boil. Then reduce the heat to low for 30 minutes.
  7. Drain the potatoes and add to pot. Stir. Cook for another 8 – 10 minutes until potatoes are cooked. Remove the Bay Leaves.
  8. Optional: Stir in lemon juice just before serving for a bright, fresh finish.
